  2. {Prepare of Egg.
  3. {Prepare 1 cup of Flour.

  6. {Take of Salt, pepper, dried herbs & spices.

  1. Dry fish and season to taste, let rest.
  2. Mix flour, corn starch, baking powder, and seasoning.
  3. Beat egg, mix with carbonated water/beer, pour into dry ingredients mix. Mix until pancake consistency, optionally use whisk to incorporate more air for fluff.
  4. Heat high smoke point oil (peanut, canola, veggie etc.) to 350f/175c and maintain. If no thermometer, test with woodden spoon - looking for medium amount of bubbling (let cool a bit if bubbles too much).
  5. Dust fish with flour, dip into batter to fully coat, let excess drip for 5s then lay away into oil.
  6. Fry for 4-8min depending on thickness, drain on rack/rolled tin foil/paper towel, generously sprinkle on salt.
