- Mix 2 tablespoons sweet chilli with juice from half a lime in a bowl.
- Paste the marinade onto the salmon leave for 20 mins if you have time.
- Put the salmon in middle of a square of tinfoil and paste some more marinade on top. Wrap it up like a parcel and put in oven (180c) for 14mins.
- Meanwhile, wash potatoes and chop them in half leaving skins on. Pop them in microwaveable bowl with half a lemon and cover with cling film -put in microwave for 10 min.
- Once potatoes are done, take out microwave and remove cling film being careful of the steam and then remove the lemon and mash with the feta coriander and chilli..
- Take the salmon out of the oven and put into a plate with fresh spinach and the mashed sweet potato - tea done in about 20 minutes!.
