  3. Mix sugar, salt & pepper (and lime zest if using) together, sprinkle over salmon, wrap in cling film for 30 -45 minutes..
  4. Preheat oven to 190C, when hot place plank in oven, on a baking tray, for 5 minutes..
  5. Remove salmon from cling film and place, skin side down, on plank, drizzle with any liquid, sprinkle on lime juice..
  6. Place in oven for 25-30 minutes until cooked, should be slightly pink in the middle..
  7. Serve with fried potatoes and peas or green salad..
  8. Also good with wild rice..
